Morgan Hipworth is a Melbourne-based chef and founder of the By Morgan Group. A trained pastry chef, he first built a following through Bistro Morgan, a cult-favourite bakehouse known for its creative pastries and strong social presence.
He has since expanded into Maven by Morgan, a Mediterranean-inspired restaurant in Fitzroy focused on share-style dining. In 2026, Morgan is launching Arla in Windsor, a Nordic-inspired daytime venue centred around salads, coffee and pastries. He is also currently developing Sera, an Italian-inspired speakeasy set to open in Fitzroy later this year.
Morgan’s style blends his pastry background with a broader savoury offering, focusing on flavour-driven, approachable dishes across both sweet and savoury formats.
