Maggie Beer’s Lemon Posset
Looking for something simple and refreshing to round off an evening meal? This is it.
With just 3 ingredients; lemon, cream and sugar there’s no excuse not to test this one out. Magge has outdone herself this time.
2 lemons, zest of
550ml thickened cream
125ml lemon juice
Combine cream, sugar, and lemon zest in a saucepan. Note: you may add more sugar if you want it to be sweeter.
Bring to the boil and continue simmering for 2 minutes. Cool for at least 10 minutes.
Strain lemon juice and when the cream mixture is cool, stir through.
Pour into individual serve glasses, cups or moulds and chill for 4-5 hours, but best left overnight.
