A trained pastry chef and founder of the By Morgan Group, Morgan first gained a cult following through Bistro Morgan before expanding into Melbourne favourites like Maven by Morgan. His style blends sweet creativity with savoury flair, focusing on approachable food that still feels exciting.
We also caught up with Morgan ahead of the show to hear more about his approach to cooking and his favourite ways to use eggs at home.
Where do you typically draw inspiration from when developing new recipes or flavours?
A lot of it comes from eating out and travelling, but honestly some of the best ideas come from just being in the kitchen and experimenting. I’m always thinking about what I’d actually want to eat, and working backwards from there. Seasonal produce plays a big role too – what’s good right now tends to drive the direction.
Sweet or savoury — what wins every time for you?
Sweet, always. It’s where my heart is and where I feel most creative. That said, I love when a sweet dish has a savoury edge to it – that balance is what makes something really interesting.
What's your all-time favourite egg dish?
A really well-made soft scramble. It sounds simple but when it’s done right, low heat, good butter, taken off just before you think it’s ready, it’s hard to beat.
Do you have a go-to meal you can whip up in 10 minutes or less?
Soft scrambled eggs on sourdough with whatever’s in the fridge – good olive oil, a bit of chilli, maybe some herbs. It’s the kind of thing that looks and tastes like more effort than it is.
What's your ultimate cooking tip or hack that instantly levels up a dish?
Brown your butter. It takes about two extra minutes and it completely transforms the flavour of almost anything – cakes, pastries, sauces. It’s the easiest way to add depth without adding complexity.
