Today, the dairy is still crafted in Pyengana using time-honoured methods, including hand-worked curds and traditional cloth maturation in a cave-like environment beneath the Farmgate Café. A unique underground airflow system helps age the cheese for up to 24 months, developing its bold, earthy character.
Made exclusively from milk sourced from local grass-fed cows, Pyengana Cheddar is renowned for its rich flavour and exceptional quality, earning some of Australia’s most prestigious cheese awards.
