Last Friday, 18 September, we brought the Good Food & Wine Show to life beyond the show floor, with a special sold-out Signature Chef Series featuring Brendan Pang at Novotel Sydney Darling Square.
Bringing together incredible food and Australian wine, the evening gave guests the chance to experience Brendan’s cooking in a more intimate setting. Working alongside Praveen Rodrigo, Director of Culinary at Novotel Sydney Darling Square, Brendan created a special four-course menu for the occasion, with Petersons Wines providing pairings throughout the night.
A taste of what was served
The evening began with Petersons Wines NV Sparkling Cuvée, alongside a selection of bites including grilled watermelon nigiri, pork floss banh mi, Massaman beef puffs, and truffled mushroom arancini.
Once guests took their seats, Brendan brought his signature flavours to the table with red curry chicken wontons in coconut broth, paired with Petersons Wines 2026 Armidale Riesling and 2026 Hunter Valley Grüner Veltliner.
For the main event, guests tucked into Brendan’s coconut Mauritian prawn curry with roti, accompanied by Petersons Wines 2022 Shiraz Cabernet and 2023 McLaren Vale Grenache.
And, of course, we couldn’t finish without something sweet. A special collaboration of mango and coconut panna cotta with spiced pineapple compote rounded out the menu, paired with Savannah Estate 2026 Limestone Coast Frizzanté.
From the kitchen to the table
It wasn’t just about what was on the plate. Guests got to see another side of Brendan as he worked alongside the Novotel culinary team behind the scenes, before stepping out of the kitchen to mingle and chat throughout the evening.
It’s exactly what we love about the Signature Chef Series – taking the chefs you know from the Good Food & Wine Show and creating an opportunity to experience their food in a completely different setting.
One delicious night in Sydney
With every seat snapped up ahead of the event, it was fantastic to see a full room come together for a night celebrating great food and wine.
