Quinoa Superfood Salad

  • 1 bunch broccolini
  • 1 cup quinoa, cooked
  • ½ cup Peruvian Golden berries dried, chopped
  • ½ bunch flat parsley, chopped
  • ½ bunch mint, chopped
  • ½ cup Peruvian Sacha Inchi nuts, chopped
  • ½ cup brazil nuts, roasted and chopped
  • 2 tbsp Brazil nut oil
  • 1 french onion, thinly sliced
  • 2 tbsp Apple cider vinegar
  • Salt and pepper to taste

Serve with:

  • Roast chicken marinated in Piquillo pepper and almond pesto
  • Hummus topped with piquillo pepper bruschetta


  • Chargrill the broccolini and chop into small chunks.
  • Mix all other ingredients together in a bowl and serve right away or reserve for later.
  • Serve alongside roast chicken marinated in Piquillo pepper and almond pesto
