Simple Summer bruschetta with Mutti Cherry Tomatoes
Published 06 Nov, 2019Sometimes the simple things are often the best. This holiday season create a delicious and easy starter using sweet and flavour-packed Mutti Cherry Tomatoes, fresh garden herbs, sourdough bread and good quality olive oil. Just like they do in Italy.
Ingredients:
- 1 x loaf of good quality sourdough bread
- 2 x cans of Mutti Cherry Tomatoes
- Good quality olive oil
- A handful of fresh basil
- A clove of garlic
- Sea salt
Method:
- Pre-heat the grill
- Finely shred/chop the basil, drain most of the liquid from the tomatoes and add tomatoes to a bowl with the basil
- Add a pinch of sea salt and mix together
- Slice the bread into 1.5cm thick pieces
- Brush each piece with olive oil
- Place on a lined tray under the grill and grill until warm and lightly toasted then remove
- Peel the clove of garlic and slice in half. Rub the sliced piece of garlic over each piece of bread to infuse with flavour
- Top each piece of bread with the tomato mixture, garnish with basil leaves and serve
