Frosé

Ingredients:

1 bottle of rosé
200g strawberries (reserve 1 or 2 for slicing for garnish)
½ cup of sugar
Juice of 1 lemon (and reserve peel for garnish)
ice cubes

Method:

  1. Place rosé into a tray and into the freezer for at least 6 hours to freeze. It will only partially freeze because of the alcohol content.
  2. Bring the sugar to a simmer with ½ cup of water. Once sugar is dissolved, add in strawberries, cook for 2 minutes. Then turn off heat and allow it to cool and infuse. Strain and chill.
  3. To make frosé, place frozen wine into a blender, along with 1 cup of ice and about 100ml of strawberry syrup and 30ml lemon juice. Blend until smooth. Pour into glasses and keep jug in the freezer to top up as needed.
  4. Garnish with a trimmed peel of lemon zest, and a slice of strawberry.
