Spencer Gulf Kingfish from South Australia
Renowned by chefs across the globe for its firm yet supple flesh and rich, sweet flavour, the Yellowtail Kingfish is considered the best fish for sashimi. It is recognised as the best white fish for carpaccio, tartare, ceviche & poke dishes. Thanks to the firmness of the flesh, it is also beautiful in a variety of cooking styles, be it grilling, pan-frying or baking.
We raise our Kingfish in the pure water of the Spencer Gulf, South Australia where the Antarctic currents flow up into the Spencer Gulf creating one of the purest, cleanest bodies of water in the world.
