Familiar with Flammekueche?

Originally a regional product from the Alsace-Lorraine region on the French side of the Rhine and the Baden/Palatinate area on the German side, Flammekueche is a disk of unleavened dough that is traditionally spread with sour cream, speck (bacon) and onion, and baked quickly (4 minutes) and crisply.

Together with the Flammekueche base – crème fraîche or sour cream form the basis for a good Flammekueche outcome. In Australia, it’s recommended to use Crème fraîche or full cream sour cream products for the best results.

Traditionally served on thin timber oval or rectangular-shaped boards which form part of the European dining experience, the Flammekueche story itself is more than just enjoying the finished product!

Depending on the occasion and taste preferences, Flammekueche toppings can be varied and enjoyed in various flavours. Here are a couple of traditional suggestions:

Classic Flammekueche
1| Preheat oven or pizza oven.
2| Spread the Flammekueche base evenly up to 0.5cm from the edge with crème fraîche or sour cream.
3| Thinly slice onion & speck (bacon) before adding to base. You can add grated cheese if that is your preference. Less is more!
4| Bake in the oven with upper & lower heat. The Flammekueche should be baked for 3-4 minutes at 250-300° (or until crispy).
5| Remove from oven and scatter chives or rocket on top and enjoy!

Sweet Flammekueche
1| Core an apple and slice finely. Do not peel the apple.
2| Use either crème fraîche or sour cream with a touch of sugar added and spread evenly leaving a small rim around the perimeter. Place apple slices on the base.
3| Place in a pre-heated 250° oven with upper and lower heat for 4 minutes or until crispy.
4| Remove from oven, sprinkle cinnamon sugar on top and enjoy!
