It’s been a hard day’s work and you’re trying to make it to 5 o’clock without losing your mind. You’re tirelessly rummaging through your cluttered spice drawer for the extensive list of spices, about to give up and eat a sad can of baked beans on toast… and the solution appears! Enter the jar of Mushroom stroganoff!

Beerenberg Meal 30 min meal bases are a fantastic solution to elevate your weeknight meals and make for some pretty effortless cooking. Made on a family farm in the Adelaide Hills from locally sourced ingredients, these carefully crafted bases are a pantry staple. With a range of diverse flavours, from Chicken and Chorizo Paella to Malaysian Kapitan Curry you can explore a new corner of the world each night from the comfort of your home.

Preparation Time: 5 minutes

Cooking Time: 25 minutes

Serves: 4 – 6 people

Ingredients

  • 1 x jar Beerenberg Mushroom Stroganoff 30 Minute Meal Base
  • 750g sliced mushrooms
  • 1 diced brown onion
  • 125ml vegetable stock
  • 200g sour cream

Serve with

  • Fettuccine
  • Sour cream
  • Flat-leaf parsley

Preparation

  1. Heat 1 tablespoon of butter in a pan. Add 60ml water, onion and mushrooms. Cover with lid and cook on high for 5 minutes.
  • Remove the lid and cook for a further 5 minutes to reduce liquid.
  • Add contents of the Beerenberg Mushroom Stroganoff Meal Base jar and stock, using stock to rinse out the jar. Stir to combine.
  • Cover with lid and simmer for 10 minutes.
  • Remove the lid, stir in sour cream and simmer for 5 minutes.
  • Remove from heat. Serve with fettuccine, sour cream and flat-leaf parsley.
