CheatMeats’ Giant Pork Lollipop
Published 15 Aug, 2024Two Western Australian, BBQ loving brothers, CheatMeats, have attempted the impossible and succeeded with their Giant Pork Lollipop. This inspired a massive trend on social media platforms, even gaining the attention of world famous chef, Gordon Ramsay! Don’t knock it before you try it, give this recipe a crack and we’re sure you wont be disappointed.

Ingredients
- 3kg Pork Belly
- Olive Oil
- CheatMeats All Purpose Rub
- Giant Skewer
Cooking Instructions
- Prepare the pork belly by carefully slicing in to one long strip.
- Roll in to a tight circle the remove all of the rind from the inside of the swirl while leaving the outer rind.
- Lay the pork belly out flat and season all sides generously with CheatMeats All Purpose Rub.
- Roll up again tightly, then pierce the bottom of the swirl with a sharp knife ready for the skewer.
- Gently skewer through the middle of the pork belly with the skewer until you have form a tight circle shape,
- Score the rind with a sharp knife then brush the rind with olive oil.
- Season the rind generously with salt.
- Place on wire rack then in to a roasting tray, and in to a preheated oven set to 200C for 60-75 minutes.
- Once the pork has hit an internal temperature of 72 C and the crackle has set remove.
- Allow to rest on the bench for 10 minutes and enjoy.
