Two Western Australian, BBQ loving brothers, CheatMeats, have attempted the impossible and succeeded with their Giant Pork Lollipop. This inspired a massive trend on social media platforms, even gaining the attention of world famous chef, Gordon Ramsay! Don’t knock it before you try it, give this recipe a crack and we’re sure you wont be disappointed.

Ingredients

  • 3kg Pork Belly 
  • Olive Oil 
  • CheatMeats All Purpose Rub  
  • Giant Skewer 

Cooking Instructions

  1. Prepare the pork belly by carefully slicing in to one long strip. 
  2. Roll in to a tight circle the remove all of the rind from the inside of the swirl while leaving the outer rind. 
  3. Lay the pork belly out flat and season all sides generously with CheatMeats All Purpose Rub. 
  4. Roll up again tightly, then pierce the bottom of the swirl with a sharp knife ready for the skewer. 
  5. Gently skewer through the middle of the pork belly with the skewer until you have form a tight circle shape, 
  6. Score the rind with a sharp knife then brush the rind with olive oil. 
  7. Season the rind generously with salt. 
  8. Place on wire rack then in to a roasting tray, and in to a preheated oven set to 200C for 60-75 minutes. 
  9. Once the pork has hit an internal temperature of 72 C and the crackle has set remove. 
  10. Allow to rest on the bench for 10 minutes and enjoy.
