MAGGIE BEER

What’s your favourite dish for sharing with family and friends?

It’s hard to go past Saskia’s chook roasted with the burst of steam from my oven; with lots of butter and fresh tarragon picked from my garden under the skin, all atop a loaf of sourdough bread to catch the juices. And of course, teamed with a beautiful salad from the garden.

Who do you like cooking for the most? Why?

I love to cook for all my family and friends; it’s something I’ve done every day of my adult life. Whether I’m just cooking for Colin or for a mob of family or friends, it’s always such a pleasure. Sharing that love of good food and the simplicity of it too, brings me so much joy.

Who do you like cooking with the most? Why?

I love cooking with Colin sitting at the kitchen bench with a glass of wine and talking through the day.

What’s your favourite cooking tip?

Don’t overcook fish, chicken, pork and always rest your meat before you carve – it’s so important!

You’ve been attending the GFWS for years, what do you like most about the show?

I love the buzz of the people, getting together with the chefs presenting and having fun all round.

What’s your favourite cooking trick?

Cooking pasta in advance and warming it in the microwave or steamer when cooking for a larger group.

What’s your favourite ingredient?

Can’t name just one! It has to be verjuice and extra virgin olive oil.

What’s your go-to meal at home for the family/housemates if you’re in a rush?

Fresh season lentils simmered in chicken stock with lots of fresh herbs from the garden, fresh ricotta and extra virgin olive oil… all in all 20 minutes for a beautiful, simple meal.
