Melted cheese, need we say more? Combined with mushrooms and truffle oil this is the ultimate comfort food.

4 Portebello mushrooms, sliced

4 thin red onion slices

4 fresh lemony thyme sprigs

2 tsp olive oil

80 – 100g extra sharp cheddar, shredded

4 slices of sourdough

1-2 tbsp of butter

1 tbsp of truffle oil

Freshly cracked black pepper & salt




Sautee mushrooms, red onion, and thyme in olive oil, salt & pepper in a pan. Remove from pan once cooked, being carefully not to over cook.

Prepare the sourdough by brushing with the truffle oil, then topping with freshly grated cheddar, sautéed mushrooms, and cover with the remaining cheddar.

On the outside of the toastie spread butter to the edges, covering both sides.

Place toastie into pan over medium heat and grill until golden brown.

To create a ‘flatter’ style toastie you can also sit a heavy pot on a tray whilst it’s cooking – it’s up to you!

Excellent served with a side of tomato veggie soup.
