Some of us have had a go at  sourdough starter in the last few months and this recipe from All The Things is a great way to use some up if you’re getting bored of sourdough bread (if that’s possible!)

Freshly homemade pasta is a great vehicle for your favourite sauces. We love either a pesto or creamy mushroom, how about you?

Ingredients

1.5 cups plain flour

1 cup sourdough starter

2 tbsp water

2 tbsp extra virgin olive oil

Large pinch of salt

Method

Place flour in a bowl and make a well in the centre.

Add the other ingredients and bring together with a wooden spoon. Alternatively, pop all the ingredients in a food processor.

When a firm, but pliable consistency is reached, turn onto a floured board and give the dough a quick knead. Proceed to use as you would any other fresh pasta dough.

You can pre make this dough and leave in the fridge for a couple of days until you are ready to use it.

If you’re making sourdough at home, it makes sense to make this pasta with the starter discard, but that doesn’t mean you need to use the pasta dough the same day. Fresh sourdough pasta waiting in the fridge for a midweek meal is a wonderful thing!
