A spice blend on your BBQ cooking can make a huge difference and is easy to achieve. Plus you can mix it up and play with flavours until you find the blend right for you. We love this recipe from Capel Vale.


1 tablespoon of each of the following:

Cummin seed

Coriander seed

Fennel seed

Sichuan peppercorn

Chilli flakes

Star anise

Ground cinnamon


Roast everything except ground cinnamon in the oven for 4 minutes at 180 degrees.

When cool, grind in a spice grinder, then add cinnamon.

This spice blend can be sprinkled on any vegetables, that may need a bit of zing, in fact it lends itself to any fish or meat for that matter, just ensure it is added prior to cooking rather than after otherwise you may end up with a hard raw taste as apposed to a delicious harmony of aromatic spices.
