Chicken and Peruvian Superfood Salad

Ingredients:
- 1 bunch broccolini
- 1 cup quinoa, cooked
- ½ cup Peruvian Golden berries dried, chopped
- ½ bunch flat parsley, chopped
- ½ bunch mint, chopped
- ½ cup Peruvian Sacha Inchi nuts, chopped
- ½ cup brazil nuts, roasted and chopped
- 2 tbsp Brazil nut oil
- 1 french onion, thinly sliced
- 2 tbsp Apple cider vinegar
- Salt and pepper to taste
Serve with:
- Roast chicken marinated in Piquillo pepper and almond pesto
- Hummus topped with piquillo pepper bruschetta
Method
- Chargrill the broccolini and chop into small chunks.
- Mix all other ingredients together in a bowl and serve right away or reserve for later.
- Serve alongside roast chicken marinated in Piquillo pepper and almond pesto
